About this Strawberry Mimosa recipe

Springtime brunch is the best way to emerge from winter hibernation. Whether you grab brunch out on the weekend with a friend or enjoy a smorgasbord at home, it’s all about that breakfast-lunch combo. With Easter coming up soon and Mother’s Day right after that, I’m excited to present to you the brunchiest springtime cocktail: strawberry mimosas.

“Brunchiest” is a word now because I just used it. You’re welcome. I’ll use it in another sentence, just in case it didn’t make sense the first time: Move over orange juice mimosas — strawberry mimosas are the pinkest, prettiest, brunchiest cocktail you can make for any spring gathering. 

Why? Puréed, fresh (or frozen) strawberries make for a sweeter version of the brunchtime classic. The sweetness of fresh strawberries married with a dry or semi-dry champagne is a match made in brunch heaven. Let’s get into how to make them!

What is a mimosa?

The mimosa is a cocktail made with orange juice that’s topped with champagne. But if you’re not an OJ lover, the classic mimosa isn’t for you. They are similar to peach bellinis, which are made with prosecco instead of champagne.

Instead, you will love trying them with all kinds of other juices all year round, from pineapple mimosas in the summer to apple cider mimosas in the fall to white cranberry mimosas for Christmas.

Another way to make mimosas is with puréed fruit, which is how we make these bright and colorful strawberry mimosas.

To make these berry mimosas at home, you’ll need a few things:

Ingredients

Strawberry mimosas are bright, rosy cocktails full of sweetness and flavor. If you like classic mimosas and strawberries, you’ll love them! Here’s what you need:

  • fresh or frozen strawberries, puréed
  • triple sec (optional)
  • champagne or prosecco

If you want to add some garnishes, you can use fresh strawberries, orange slices or even a sprig of mint. You could even dip the rim of each glass in strawberry sugar.

Best champagne for mimosas

Because mimosas are typically sweet, I suggest a drier champagne or sparkling wine because you will want your bubbly to have a bit of a bite. Prosecco is also great for this.

Since strawberries are so sweet, I will double-down on that suggestion, so, definitely stick to a sparkling wine on the drier side to pair with the sweet berries. Look for words like brut or dry on the label. Cava and prosecco will both work well.

Variations & substitutions

Mix things up with one of these variations on the strawberry mimosa:

Mixed berry mimosas: Make a mixed berry purée with blueberries, raspberries or blackberries. Or make several purées and let your guests build their own berry mimosa with their favorite flavor!

Strawberry lemonade mimosas: Don’t want to make the purée? You can skip this step and use strawberry lemonade in place of the strawberry mixture.

Strawberry mimosa mocktails: You can make virgin mimosas with ginger ale, sparkling cider or alcohol-removed champagne.

How to make Strawberry Mimosas

Making these cocktails is as easy as 1, 2, 3! Here’s what to do:

First, wash your strawberries and pat them dry with a paper towel. Then hull the strawberries to remove the leaves and stems. I use a strawberry huller * tool like this, but you can also use a paring knife to cut off the leaves. 

Throw the hulled strawberries into your blender or food processor and turn it on medium speed. Blend until they are smooth. Some seeds will remain, but you don’t want any chunks of berries. Strain the mixture into a jar with a fine mesh strainer * to remove any seeds or lingering chunks. (You can skip this step if you don’t mind a little pulp.)

Spoon 1-2 tablespoons of the strawberry purée into the bottom of a champagne glass. (You can eyeball it and just pour a little into each glass if you want!) Add the triple sec if you’re using it!

Top with your favorite bubbly and serve immediately.

make a big batch

This drink is a great one to serve a crowd for a party. Make the base ahead of time in a pitcher and stash it in the fridge. Add any bubbly ingredients just before serving. Use the +/- buttons in the recipe below to multiply the ingredients.

Tips & tricks

Here are some tips and tricks for making this recipe:

  • Be sure your champagne is well-chilled. Warm champagne doesn’t have as many bubbles.
  • Strain out the strawberry pulp and seeds through a fine-mesh strainer *.
  • Add the triple sec for a little depth of flavor. It’s an orange liqueur, so it adds a bit of extra sweetness and interest to every sip.
  • If it’s not sweet enough, you can add ¼ ounce of plain or strawberry syrup.

When to serve Strawberry Mimosas

Strawberry Mimosas are a perfect choice for baby and wedding shower menus, girlfriend brunches at home and crafternoons with your mom.

It’s also a really different drink for celebrating Easter brunch, Mother’s Day breakfast or even a Valentine’s Day date night. Classic is nice, but switching things up is way more fun if you ask me!

At your next get-together, set up a mimosa bar for guests to DIY their drinks. Provide a few different types of juices and a few bottles of bubbly and let guests have fun. Take it up a notch with a few garnishes like fresh berries and citrus slices.

A mimosa bar is always fun at a party, so try serving these strawberry pretties alongside classic mimosas, guava mimosas, coconut mimosas and blood orange mimosas for a rainbow of colorful cocktails! Try it for game day gatherings or even bachelorette parties.

Food pairings

Strawberry mimosas go with all your favorite brunch treats. Enjoy them with berry treats like blueberry crumble muffins and strawberry rolls or go fruitier with lemon poppyseed scones and homemade pop tarts.

You should also make a ton of chocolate-covered strawberries — you can never have too many of those.

FAQ

Can you make the purée ahead of time?

You absolutely can make it a day ahead and store in the fridge in an airtight container like a jar. If there is any settling you can stir or shake it back together or re-blend it. You can also strain out the seeds if you like!

Can I use frozen strawberries?

Yes! You can blend them frozen (not thawed) with a little bit of water. It is a little tougher than using fresh berries, but it’s totally fine to do.

Can you make this recipe non-alcoholic?

Totally! Non-alcoholic mimosas are delicious with ginger ale, sparkling cider or alcohol-removed champagne. Club soda also makes for a lightened-up version.

Strawberry Mimosa

  • 1 ounce strawberry purée
  • 1 ounce triple sec (optional)
  • 4-6 ounces champagne or any dry sparkling wine

instructions

  • In a blender, puree strawberries until smooth. (If needed, add ¼ cup water.) Strain out the pulp and seeds through a fine-mesh strainer, if desired.
  • Fill a champagne glass ⅓-full of strawberry purée.
  • Add the triple sec, then top with champagne. Serve immediately.

Strawberry mimosa mocktail: Skip the triple sec. For the champagne, substitute a bubbly, non-alcoholic mixer such as sparkling cider, sparkling lemonade, ginger ale, club soda or lemon-lime soda.
