Yes, yes and yes. This s’mores old-fashioned recipe is an updated version of the classic whiskey cocktail. It’s full of nostalgia, yet so grown-up.
You’ll infuse bourbon with graham crackers, flavor it with chocolate bitters and garnish it with a toasted marshmallow or two.

What is an old-fashioned?
The old-fashioned is a classic cocktail made with any type of whiskey — usually bourbon — or another strong spirit like mezcal or aged rum.
Old-fashioned cocktails are spirit-forward, meaning they are heavy on the alcohol. They don’t have any mixers like sour mix or soda.
Instead, they include small amounts of added flavor, usually in the form of orange zest, a cocktail cherry, some kind of bitters and a sugar cube or simple syrup.
This one uses graham cracker-infused bourbon, chocolate bitters and burnt sugar syrup, and tastes just like a toasty s’more.
For the garnish, you can rim the glass in chocolate syrup and dip it in graham cracker crumbs. And with a skewer of toasted marshmallows on top, it will smell just like a s’more too.

Ingredients
You only need a few ingredients to make this s’mores cocktail. Here’s what to grab from the grocery store and liquor store:
Graham crackers
It’s not a s’more without graham crackers!
I use the classic honey-flavored ones, but feel free to mix it up with cinnamon graham crackers or chocolate graham crackers. If you dare, you can even make homemade graham crackers.
You will only need a few graham crackers for this recipe: 1-2 for the bourbon infusion and 1-2 for graham cracker crumbs on the rim. If you want to make more of the bourbon, you can use a whole sleeve of graham crackers to multiply the recipe.
To make graham cracker crumbs, place a couple of graham crackers in a ziptop bag and seal it so there is no extra air in it. Then roll them with a rolling pin until you have fine crumbs.

Bourbon
To make graham cracker-infused bourbon, you need the right bourbon. Don’t get one that’s already been flavored, like cinnamon whiskey.

Burnt sugar syrup
Burnt sugar syrup is made by caramelizing and burning sugar, then turning it into a simple syrup. It has a toasted flavor that adds a complexity of flavor to the cocktail. There is an underlying marshmallow flavor that is so good in this cocktail! You can buy burnt sugar syrup from Tippleman’s online or you can make it yourself.
Feel free to substitute with simple syrup or honey syrup. If you want a stronger marshmallow flavor, you can make toasted marshmallow syrup.
Chocolate bitters
Chocolate bitters give this cocktail it’s melted chocolate flavor. It gives it a balance with the sweetness of the burnt sugar syrup and bourbon.
There are a number of bitters brands selling chocolate bitters. Here are a few of my favorites:
- Scrappy’s Chocolate Bitters are classic chocolate.
- El Guapo Spiced Cocoa Bitters have a gently spiced flavor.
- Hella Mexican Chocolate Bitters include notes of cinnamon.
Ice
Ice is always an important piece of any cocktail.
For an old-fashioned, I recommend a large ice cube or sphere because it will take longer to melt than a bunch of smaller cubes.
As a result, your cocktail won’t get diluted too quickly, as spirit-forward drinks need to be sipped more slowly than an easy sipper like a mojito.

Garnishes
A cocktail isn’t done without a garnish! This
I dipped a part of the rim in chocolate syrup and then rolled it in graham cracker crumbs.
On the top, I added a bamboo skewer with a couple toasted marshmallows. You can toast marshmallows over a fire, with a lighter or — my favorite — with a kitchen blowtorch.

How to make Graham Cracker-Infused Bourbon
Add a graham cracker to a jar, breaking into pieces if needed.
The crackers will disintegrate and become soggy. To avoid cloudy bourbon, you can place them in a disposable tea bag or wrap them in a coffee filter.
Top with your favorite bourbon. Then cover it and infuse them together for 4 hours or up to 12-24 hours.

When it’s ready, strain out the graham cracker with a fine-mesh strainer.
How to make a S’mores Old-Fashioned
The cocktail comes together just like a classic old-fashioned.
- First, infuse your bourbon. This takes a few hours, but it’s best if you can do it overnight.
- Then dip the rim of an old-fashioned glass in chocolate syrup and dip in graham cracker crumbs.
- Add your burnt sugar syrup, graham cracker-infused whiskey and a few dashes of chocolate bitters.
- Then lower in a large ice cube.
- Skewer a couple marshmallows on a cocktail pick and toast them with a lighter or kitchen torch. Place the skewer on top of the glass.

Variations and substitutions
No burnt sugar syrup? Feel free to use brown sugar syrup or demerara syrup instead. You can also use sugar-free simple syrup instead.
No time for graham cracker bourbon? You can use any bourbon and still get some marshmallow and chocolate flavor from the bitters and garnishes.
