Make S’mores Rice Krispies Treats for a party to enjoy all the pleasures of camping in one easy, no-bake dessert. Cereal bars are dipped in melted chocolate, then topped with graham cracker crumbs and toasted marshmallows.

Rainy days are my favorite. As I write this, there is the most delightful summer thunderstorm happening outside.
I do love staying up late and writing as I listen to the rainfall, the rumbles of thunder, the flashes of lightning outside.
Arguably one of the best parts of summer.
Sadly, Labor Day Weekend is always the unofficial end of summer.
Chris and I fully plan to enjoy every drop of summer this weekend — even though it won’t cool down here for at least another month or two.
There is a pool-day in our future. Well, weather permitting — I am hoping it won’t rain for the billionth Saturday in a row. (Unless it’s a really good thunderstorm.)
I’m also hoping for a fire in the fire-pit so we can make s’mores. Weather willing on that too, I guess.
But if it rains, I will definitely make up for it with a batch of S’mores Rice Krispies Treats.
In addition to thunderstorms, s’mores are one of my favorite parts of summertime.
When it comes to classic s’mores, I prefer them cooked over a campfire.
Gooey marshmallows, almost all the way charred, but not quite burnt to a crisp. Crunchy graham crackers. Melted chocolate. Mmm, perfection.
I’m happy to enjoy s’mores as a flavor too, such as in my favorite no-bake s’mores cookies.
Oh, and these S’mores Rice Krispies Treats of course! They’re the basic cereal bar recipe, but I stirred in actual chunks of graham crackers into the mix.
Then I dunked them in melted chocolate, topped them with a sprinkle of graham crackers and mini marshmallows.
However, indoor s’mores do nicely in lieu of a campfire. Toaster ovens are great for this, as is the broiler in the oven if you can watch closely.
We have taken to enjoying our marshmallow’s torched by Chris’s new favorite toy: his butane torch.
Oh yes.
And though I rolled my eyes at first, I changed my tune when I realized its resourcefulness for indoor s’mores!
Typically used for things like crème brulée (or cocktails, if you’re Chris), these powerful little flamethrowers make great substitutes for a campfire.
The torch also came in handy for these s’mores bar treats to get that charred look, but you can stick the treats under the broiler for a few minutes if you prefer. Or you can leave them untoasted! Totally up to you.
These S’mores Rice Krispies Treats make for a show-stopping party dessert, which is why I am making them for my friend Erin’s virtual baby shower today!

S’mores Rice Krispies Treats
ingredients
- 1 sleeve graham crackers divided (about 8 or 9 graham crackers)
- 5 tablespoons butter
- 12 ounces marshmallows about 4 cups regular or 6 cups miniature, plus 1/2 cup miniature for topping
- 6 cups crispy rice cereal
- 6 ounces semi-sweet chocolate chips
instructions
- Lightly spray a 9×9-inch pan with cooking spray and set aside. Line a baking sheet with parchment paper.
- Finely crumble the graham crackers in a food processor, or crush them in a ziptop bag. (It’s okay if some larger chunks remain.)
- In a saucepan over medium heat, melt the butter. Stir in the marshmallows and let them melt.
- Stir in the cereal and half of the graham cracker crumbs until well-coated.
- Press mixture into the pan and level with a spatula. (Spray the spatula lightly with cooking spray to keep the mixture from sticking.) Let cool completely, at least 1 hour.
- Once cooled, cut the bars into 16 1-inch squares. (That's four rows by four rows.)
- In a microwave-safe bowl, melt the chocolate chips in 20-second intervals, stirring in between, until melted.
- Dip a corner of each bar in the melted chocolate. Use a knife or metal spatula to smooth it, if needed. Place on the prepared baking sheet.
- Sprinkle the bars with remaining graham cracker crumbs, then top with mini marshmallows.
- If desired, place the baking sheet under broiler for 3-4 minutes, checking frequently to avoid burning. Alternatively, you can use a blowtorch to scorch the marshmallows.
