S’mores Avalanche Cookies are a quick and easy cookie you can make anytime. Whether for a holiday cookie tray or a summer camp treat, these no-bake desserts bring all the flavors of the campfire without the fire!

Christmas is only a couple weeks away, and that means if you’re anything like me…

Well, you’re not ready yet. 

Though I try to wrap a present or two a day, I’m sure I’ll still be wrapping them on Christmas Eve. (Don’t judge me — I just always seem to miss one!)

I’ll also probably forget to make the playlist until 5 minutes before the first person arrives to our family Christmas party. 

And I will likely be scrambling to vacuum every piece of wrapping paper glitter from the floor right up until we have to leave to fetch my sister from the airport. 

I know I’m not alone in this! It’s just a busy season, and it’s super hard to fit everything in.

This is why I love n0-bake desserts, especially at the holidays. They’re also great in the heat of summer, when you don’t want to be within a foot of a piping hot oven. 

No-bake recipes typically can be made with the help of the microwave, sometimes a pot on the stove. 

Beyond that, just stir together the ingredients and drop spoonfuls onto a cookie sheet, and you’ve got yourself a quick batch of cookies or bars. 

That’s time well spent, if you ask me.

One of my favorite holiday cookies are Avalanche Cookies, a mix of white chocolate, peanut butter, peanuts, rice krispies and marshmallows.

They look like little snowballs, and they are a mix of crunchy and chewy. I love serving them at Christmastime because they are a lesser known holiday cookie!

One thing I love about Avalanche Cookies is that they make a nice blank slate for other flavors.

Last year, I tied in Oreos for a Cookies and Cream version, and this year, I’m going s’mores. 

We really like s’mores around here (if you can’t tell by these S’mores Rice Krispies Treats or these No-Bake S’mores Cookies).

That’s why this year seemed like the perfect time to introduce graham cracker crumbles and chocolate into the mix. 

To make No-Bake S’mores Avalanche Cookies, you’ll first make regular Avalanche Cookies, but instead of peanuts, add chunks of graham crackers to the batter.

Then drizzle melted chocolate over top and then sprinkle graham cracker crumbs on top.

The summery s’mores combo is just what I needed when I whipped them up on a recent snow day!

No-Bake S’mores Avalanche Cookies

This quick, no-bake cookie recipe is perfect for summer cookouts or the holiday season — or any time in between! They are great for parties, cookie trays and cookie swaps.

  • Line a baking sheet with parchment paper. Set aside.
  • Crumble graham crackers into 1/2-inch chunks. Separate any crumbs from larger pieces and set aside. 
  • In a large bowl, stir together large graham cracker chunks, cereal, marshmallows and salt. Set aside.
  • In a glass, heat-safe bowl, melt the white chocolate chips in the microwave for 20 seconds on 50% heat. Stir. Repeat until white chocolate is completely melted and smooth. Be careful not to overheat.
  • Stir in the peanut butter until well-combined.
  • Pour white chocolate mixture over the cereal and marshmallows. Stir until the white chocolate completely coats the cereal mixture. If it’s runny, add more cereal and marshmallows, 1/4 cup at a time.
  • Spoon heaping tablespoons of the mixture onto the baking sheet. Allow to cool and harden, about 15 minutes. For faster set-up time, place baking sheet in the fridge for 10 minutes.
  • In another glass, heat-safe bowl, melt the semisweet chocolate chips in the microwave for 20 seconds on 50% heat. Stir. Repeat until the chocolate is completely melted and smooth. Be careful not to overheat.
  • Use a fork to drizzle ribbons of chocolate over the cookies. Sprinkle with remaining graham cracker crumbs.
  • Allow chocolate to cool and harden, about 45 more minutes. For faster set-up time, place baking sheet in the fridge for 20 minutes.
