The holidays won’t be the same without this delicious and easy pomegranate mimosa recipe to start the day! Whether it’s brunch or a party, this festive, bubbly champagne cocktail is made with just a few ingredients.

Halloween is behind us, so naturally, it’s time to start thinking about Thanksgiving and Christmas.

Right? Or do we get a week off of holiday planning?

Truthfully, holiday planning shouldn’t be as hard as it is.

I am all about simple cocktails that only have a few ingredients. Three-ingredient cocktails are an important batch to keep around.

That brings me to this easy, 2-ingredient pomegranate mimosa drink recipe.

Pomegranate mimosa recipe

The recipe for a mimosa with pomegranate juice is so very simple.

Take a champagne flute (stemless or with stem — it can even be a wine glass!) and fill it with 2 ounces of pomegranate juice.

Then top it with your favorite champagne! And you have the perfect cocktail with which to toast any occasion.

You can enjoy this sparkling pomegranate mimosa recipe for Thanksgiving lunch, for Christmas morning, for a holiday brunch or for a cookie decorating party… or just for a weekend breakfast in the fall!

You can sometimes buy pre-made pomegranate mimosa bottles at Aldi or other shops where wine is available. Soleil Mimosa Pomegranate is another brand out there.

However, I much prefer to make them myself!

What is a mimosa?

A mimosa is the name for a cocktail that’s traditionally made with orange juice and champagne. Mimosas are similar to bellinis, which are made with peach puree and champagne.

Sometimes mimosas have an additional ingredient — triple sec or orange liqueur, like Grand Marnier or Cointreau.

Vodka, whiskey or rum are sometimes added, too. (The Seelbach is one of my favorite champagne cocktails with bourbon, though it’s not a mimosa.)

Traditionally served at breakfast or brunch, it’s bubbly, zesty and fun. This Christmas pomegranate mimosa is simply a twist on the classic.

Some people don’t like mimosas, but big deal! They can just have champagne, which is honestly perfectly fine!

You can mix up the OJ part of mimosas with other fruit juices like I did with these strawberry mimosas and guava mimosas.

Ingredients

This recipe calls for just two ingredients, so they need to be the best ones you can afford to make it the best pomegranate mimosa recipe.

Technically, there are two more ingredients you can add if you want to get fancy, but they’re totally optional.

Pomegranate juice: Pomegranate juice is easier to find in the grocery store these days. Look in the juice aisle or the refrigerated section. Sometimes I see it in the single-serving juices area, which is near the deli section in my store.

Champagne: Any kind of sparkling wine, such as cava or prosecco, will work. Since pomegranate juice is sweet and tart, you can get away with a dryer sparkling wine. Look for “brut” on the label. Look at my guide to sparkling wine to help you pick out a bottle.

Triple sec: You can add 1 ounce of Grand Marnier, Cointreau or triple sec for some extra orange flavor. But if you want to keep things simple, feel free to skip this step.

Pomegranate arils: Pomegranate arils AKA pomegranate seeds are This is a garnish that is totally optional — feel free to float a few on top of the cocktail for a pretty garnish. Learn how to cut a pomegranate to get the seeds out easily.

Variations

There are a few ways you can update this pomegranate mimosa for your holiday gatherings.

Instead of 2 ounces of pomegranate juice, substitute half of it with these ideas:

  • Make a cranberry pomegranate mimosa with 1 ounce cranberry juice and 1 ounce of pomegranate juice, then top with champagne.
  • A pomegranate orange mimosa can be made with 1 ounce of pomegranate juice and 1 ounce of orange juice, plus bubbly. This would be a riff on the Sunset Mimosa, which is made with cranberry and orange juices.
  • Create an apple pomegranate mimosa with 1 ounce of apple cider or apple juice and 1 ounce of pomegranate juice, then the champagne.

Also, the POM Wonderful brand of pomegranate juice has a few flavors that you can substitute for plain pomegranate juice.

Make this a blueberry pomegranate mimosa recipe with their blueberry pomegranate juice, or use their cherry pomegranate juice to make a cherry pomegranate mimosa.

For the non-drinkers at your gathering, you can skip the champagne and use sparkling cider for a non-alcoholic pomegranate mimosa mocktail. I also recommend this Christmas Spa Water for the table!
