Baileys Iced Coffee

It’s no secret that I’m a coffee lover. In the mornings, I like hot coffee, but in the afternoon, I like to go for something a bit cooler.

Whenever I go to a coffee shop, I am usually that freak that orders a cold coffee whether it’s January or July.

Buying coffee out can definitely get expensive, so I’ve come to love cold brewed coffee that I can enjoy at home, sans judgement from the baristas.

I decided to spike my beloved iced coffee with a little bit of creamy Baileys, and let me just say: I want to drink this forever.

This recipe is for a spiked coffee with a hint of Irish cream liqueur. It’s a great afternoon pick-me-up for the weekends. It could even be an after-dinner drink, in lieu of an Irish coffee.

A Baileys iced coffee is a fun way to enjoy an iced coffee, for a few reasons:

  • Though it can be an afternoon or morning treat, this alcoholic beverage is more of a coffee cocktail to enjoy after dinner.
  • Irish cream makes for a delicious creamer to add to your cold brew.
  • And it’s super easy to make at home!

It’s a great recipe for special occasions and anytime, really. It’s especially festive for the holidays and St. Patrick’s Day.

You only need three ingredients to make this the perfect drink.

Irish cream liqueur

Irish cream is a creamy alcoholic liqueur made with flavors of chocolate, coffee and Irish whiskey. It is opaque and creamy, with a slight brown color.

Baileys Irish cream is perhaps the most ubiquitous brand of Irish cream here in the States, but there lots of other brands out there, including Carolan’s, Kerrygold, St. Brendan’s and Ryan’s.

Did you know you can also make your own Irish cream liqueur? This is one of my favorite gifts at the holidays. It is rich enough to drink on its own, but you can also mix it into cocktails. It’s amazing in a coffee drink, too!

Cold brew coffee

Cold brewed coffee is just what it sounds like — coffee that’s brewed at room temperature for 15 to 24 hours.

Because the cold brew concentrate is so strong, you must dilute it with milk or water.

And because it’s cold, it makes an excellent iced coffee because you don’t have to wait for the hot coffee to cool down before pouring over (and probably melting) your ice cubes. 

Cold brew can be purchased at the grocery store, but you can also make your own cold brew.

It makes a ton, so it’s really nice if you’re making coffee for a crowd or desire a few coffee cocktails like this coffee tequila milkshake or mocktails like this coffee soda.

You can use fresh brewed hot coffee, but make sure it’s room temperature or chilled coffee by the time you mix it into this drink. Instant coffee will work too.

Milk

The last thing you’ll need for this alcoholic coffee is a bit of milk.

My go-to is half-and-half, as I find it’s the perfect consistency. Heavy cream will make it thicker, and milk will make it thinner. I suggest whole milk or 2% milk.

You can even use a dairy-free milk such as oat milk, soy milk, almond milk or coconut milk. But if dairy is a concern, be sure that your Irish cream is dairy-free too. (Baileys does make an almond milk version called Baileys Almande.)

Any kind of creamer would also work, but it may be too sweet along with the sweet cream flavor of Baileys.

Variations and substitutions

Non-dairy: Use non-dairy Irish cream, such as Baileys Almande.

Non-alcoholic: Use Irish cream syrup and your milk of choice.

Hot Baileys coffee: Use hot coffee and stir in Baileys along with your favorite milk for a warm coffee drink.

Frozen Baileys coffee: Throw all the ingredients in a blender with some vanilla ice cream for a truly delicious drink.

Chocolate lover’s: Drizzle the inside of the glass with some homemade chocolate syrup.

Iced Baileys Latte: Use fresh brewed espresso instead of coffee.

How to make Baileys Iced Coffee

Making an iced coffee with Irish cream is super easy. Here’s what to do:

First, fill a cup with ice. (Coffee ice cubes would take this over the top!)

Add cold brew over top, but be careful not to fill it up all the way.

Pour milk over top. Don’t you just love the way the coffee and milk swirl together?

Next, add the Irish cream on top. Stir gently with a bar spoon or straw.

If you like, you can add some boozy Baileys Whipped Cream on top!

  • 2 ounces Irish cream liqueur
  • 2 ounces milk half-and-half or heavy cream
  • 4 ounces cold brew coffee see note
  • ice cubes

instructions

  • Add cold brew to a glass filled with ice.
  • Pour Baileys and milk over top.
  • Stir gently with a bar spoon or straw. Serve immediately.

notes

Instead of cold brew, you can use 2 ounces cold brew concentrate plus 2 ounces of water.
If you need to modify the amount, use equal parts of all three ingredients. You can also substitute brewed coffee for cold brew, but be sure it's room temperature before pouring over ice.
To add less alcohol, use one ounce Irish cream and three ounces milk, half-and-half or heavy cream.
For a dairy-free version, use Irish cream syrup plus your milk of choice.
