The paloma is a sweet-and-sour grapefruit drink that’s made with tequila. Learn how to choose the right tequila.

I was chatting with a bartender last week, and she explained that the paloma is actually more ubiquitous in Mexico than the classic margarita. She said a lot of people think the margarita is the official drink, but that simply isn’t true.

With Cinco de Mayo coming up tomorrow, I thought it would be the perfect time to turn this drink into Jello shots! They’re perfectly sweet-and-sour with a salt or sugar rim and a grapefruit gummy candy for a garnish.

Paloma Jello Shots

Yield: 16 jello shots
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes
Paloma Jello Shots are a jiggly take on the classic Mexican cocktail. Sweet and tart, the grapefruit flavor is so unique for a jelly shot!

  • Prepare molds.(I used plastic cups.) Spray them lightly with cooking spray.
  • In a small saucepan, combine sugar, water and grapefruit juice. Sprinkle gelatin over top and allow to rest for 5 minutes until gelatin is softened and the liquid’s surface appears slightly wrinkled.
  • Turn heat on to medium. Stir mixture until sugar dissolves and gelatin is smooth. Do not boil. Remove from heat. Stir in tequila. Distribute the liquid evenly among the molds. Refrigerate 3 to 4 hours before serving.
  • Garnish with a salt rim and a wedge of grapefruit gummy candy.

notes

The taste of these jello shots is very bitter when enjoyed as soon as they are set (3-4 hours). I find they taste much better — sweeter but still flavorful — once they have sat for 12-24 hours. I recommend making them in advance!

    I made these paloma jello shost for a fiesta themed party and everyone luuuuved them! I doubled the recipe and omitted the salt from the rim. I couldn’t find grapefruit candy so I garnished the cups by laying a small wedge of lime on each shot, which I saw in a margarita jello shot recipe. Soft pink and lime green turned out to be a beautiful festive color combination. This is the perfect margarita alternative I was looking for. Thank you for the inspiration! I will definitely make these again.
