Lavender Latte recipe

Spring is in full bloom. The garden is sprouting. The pollen is everywhere. The cicadas are loud. The bees are buzzing.

That means — in my house at least — it’s time for edible flowers.

Floral flavors are so much fun to cook with. Fragrant yet soft, the experience of eating flowers is even better than smelling them.

Enter the Lavender Latte. This floral coffee drink is the perfect way to infuse edible flowers into your day. Whether it’s a warm one in the morning or an iced pick-me-up in the afternoon, these botanical beverages are the ultimate celebration of springtime.

This latte is inspired by the Starbucks Lavender Oatmilk Latte. Their version’s lavender flavor comes from powdered lavender, but you can mimic it by making homemade lavender syrup.

Tools & glassware

You don’t need a lot to make this lavender latte!

Primarily, you’ll need a way to make espresso. We like our Nespresso machine, but if you don’t have something like this, you can use really strong coffee.

For the syrup, you’ll need a saucepan, wooden spoon and a fine-mesh strainer.

Serve your iced latte in a tall tumbler. Or, if going for a hot latte, use your favorite mug. Or take it on the go in your favorite thermos.

Ingredients

Here’s what you’ll need for this easy recipe:

  • Lavender simple syrup: Though you can buy lavender syrup, it is very easy to make at home with sugar, water and lavender flowers.
  • Espresso: You’ll need a double shot! I recommend a dark or medium roast to pair with this bright and sweet syrup. Starbucks uses their blonde espresso roast or their signature espresso roast.
  • Milk: You can use your favorite kind of milk here. Oat milk helps to make this more like the big box version, but you can also make it with whole milk, 2% or any non-dairy milk. If you are steaming milk for a hot latte, keep in mind that some milks froth better than others.
  • Ice: Optional, of course. I’ll show you how to make this a hot drink as well.

Garnishes

No garnish is necessary for a coffee drink, but you know I can’t turn down an opportunity to be a little extra! Here are a few ideas:

  • Add a rim of lavender sugar for extra floral flavor.
  • Sprinkle on a few dried lavender flowers on top.
  • Place a sprig of lavender into the drink.
  • Use a flower ice cube with lavender flowers suspended inside.

Variations and substitutions

Mix things up with one of these variations:

Without an espresso machine: No espresso machine? No problem! Simply brew a strong batch of hot coffee using your preferred method — such as a French press or drip coffee maker — or a strong batch of cold brew coffee — and then add milk and lavender syrup to create a similar flavor profile.

Other floral lattes: Experiment with other types of flowers. Try elderflower syrup, rose syrup or hibiscus syrup.

Sugar-free lavender latte: Use coconut sugar, honey or another sugar-free substitute in the syrup for a refined sugar-free alternative. Learn more about these in my sugar-free syrup recipe.

Vegan lavender latte: Make sure to use a plant-based milk for a dairy-free version.

Lavender oatmilk latte: Make this drink with oat milk to make it more like the Starbucks version.

Lavender syrup ingredients

To make lavender syrup, you will need:

  • sugar
  • water
  • lavender flowers (fresh or dried), lavender essential oil or lavender extract

Best lavender flowers

I recommend using dried lavender buds or fresh flowers in the syrup for the freshest flavor and fragrance. Dried lavender flowers can be found online or in specialty grocery stores. (Make sure they are labeled food-safe.)

Fresh lavender blossoms will be lovely as well! As long as no pesticides have been used, fresh flowers are safe to use. You can sometimes find fresh ones in the springtime at specialty grocery shops or from local farmers at the farmers market. (Lavender plants are wonderful for bees, so I always try to have one in my herb garden.)

You can also use lavender extract or lavender essential oil if you don’t have access to the flowers. These are a great way to get natural lavender flavor without having to use the flowers.

Essential oils are very strong, so you will only need to add a few drops (around 5-6, depending on how strong you like your syrup). Keep in mind they will leave behind their oily residue on the syrup. Lavender extract is the better choice of the two, as it is typically made with water or alcohol, and will blend more easily into your syrup.

How to make lavender syrup

Lavender simple syrup is an easy recipe that can be made in just a few simple steps:

  1. Measure equal parts sugar and water.
  2. Add them to a saucepan over medium heat.
  3. Stir them together until combined.
  4. Remove from heat. Add your lavender flowers while it’s hot. (If using extract or oil, wait until it has cooled completely to stir it in.)
  5. Let the flowers steep for 15 to 30 minutes, or until the syrup has the floral flavor you love.
  6. Let it cool down fully to room temperature, then pour it into a fine-mesh strainer into a mason jar (or another airtight container) and store it in the fridge or use it in cocktails, iced tea, lemonade and coffee immediately!

Add the lavender simple syrup to a 16-ounce glass. Pour the shot of espresso into the glass and stir to combine.

Lavender Latte

  • 1-2 tablespoons lavender syrup
  • 2 ounces espresso (a double shot)
  • ½ cup milk
  • ice

Lavender Syrup

  • In a medium saucepan over medium heat, combine sugar and water. Stir until sugar has dissolved. Do not let boil.
  • Remove from heat and stir in the lavender flowers. Let rest for 30 minutes, stirring occasionally. Leave in longer for a stronger flavor. Strain out the flowers with a fine-mesh sieve.
  • Store in a mason jar for up to two weeks.

This latte can be made as mildly sweet or heavily sweet as you want. That’s the beauty of making your own coffee drinks at home! I don’t like super sweet drinks, so I preferred 1 tablespoon of syrup in my latte. A tablespoon of syrup made a mildly sweet latte, and two tablespoons made much sweeter latte, similar to Starbucks’.
