This green mocktail has become our new favorite way to celebrate without the scary ingredients. It blends kiwi, cucumber, mint and lime into a fresh, naturally green juice that’s topped with lemon-lime soda for a fizzy finish. Light, bright and easy to sip, it’s a great choice for any Halloween gathering.

Serve this drink in a tall highball glass or a stemless wine glass filled with ice. I used skeleton wine glasses for these!
And for the garnish, use a paring knife and a straw or small round cutter to create the skull shapes in your cucumber slices.

Instructions
Let’s make these easy Halloween mocktails!


Place the diced kiwi, cucumber pieces, mint, lime juice, agave and water in a food processor or blender. Blend until smooth.


Strain through a fine-mesh strainer * and discard the pulp.


To make a mocktail, add 2 ounces of the kiwi-cucumber-lime mixture to a glass filled with ice. Top with 4 to 6 ounces of lemon-lime soda or club soda. (I don’t recommend ginger ale, because it changes the color of the drink into a yellowish hue.)


Stir gently. Garnish with cucumber slices and a mint sprig.

Tips & tricks
- Make the base ahead. Blend the juice base ahead of time and chill it for faster serving.
- Stick with clear soda. Ginger ale can make the color a bit murky and unnatural.
- Adjust the sweetness to taste. Taste the puree before straining and adjust the agave to your liking.
