Blackened Steak and Blue Cheese Nachos are a glorious snack for game day. Steak cooked on the grill or in a skillet is served atop a bed of potato chips and blue cheese queso.

How is it possible I have never shared a recipe for nachos over here?
That’s ridiculous because nachos are so totally the best.
Whenever I go to a Panthers game, I always share a plate of them — usually corn chips and (mostly terrible) yellow queso — with whoever is at the game with me.
A few years ago, the stadium opened a fancy nachos place.
You could get meats and vegetables piled on top of perfectly round chips and enjoy them from your seat.
Not recommended in December, though, because the queso would be cold by the time you made it back to your seat.
(I was semi-sad to see that place has been replaced by barbecue. I was also semi-happy to see that place has been replaced by barbecue.)
And, when I was in high school, my favorite after-school snack was microwaving grated cheese over tortilla chips.
And my favorite bar in Raleigh had the best vegetarian black bean nachos that I ordered just about every time I went there.
So, really, as you can see, nachos are just a staple in my life. It’s seriously absurd that this is my first F+W nachos recipe!
Let’s get to it. These Blackened Steak and Blue Cheese Nachos are a killer way to enjoy game day.
You’ll need potato chips, preferably plain, salted kettle-cooked ones. You’ll mix up a batch of blue cheese queso. You’ll dice tomatoes and green onions.
You’ll blacken a steak in a cast-iron skillet (or on the grill, if you prefer).
You might even get a box of those crispy fried onion crisps (as seen on most green bean casseroles at Thanksgiving).
And then you’ll throw it all together on a large plate and sprinkle blue cheese crumbles on top.
Perfection! Best paired with a lager, ale or cider. Or maybe a frozen blue margarita if your team is also the Panthers. And football, of course!

Blackened Steak and Blue Cheese Nachos
ingredients
- 1 teaspoon salt
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- freshly ground black pepper to taste
- 2 thin New York strips
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 tablespoon flour
- 1 cup milk
- 3 ounces blue cheese plus more for garnish
- potato chips kettled-cooked and salted
- 2 green onions thinly diced
- 1 medium tomato diced
- ½ cup fried onion crisps
instructions
- In a small bowl, mix together salt, paprika, garlic powder and freshly ground black pepper (to taste). Rub into the steaks.
- Heat olive oil in a cast-iron skillet on medium-high. When hot, add the steaks. Cook 6-8 minutes on each side or to desired doneness. Remove from heat and let cool.
- While steak is cooking, prepare blue cheese queso. In a medium saucepan, melt butter. Stir in flour to create a roux. Whisk in milk. Bring to a low simmer for 3 minutes. Remove from heat and stir in blue cheese.
- Prepare a plate with chips. Drizzle with blue cheese queso. Add steak, green onion, tomato, onion crisps and blue cheese crumbles. Serve immediately.
