About this Strawberry Mocktail recipe

There’s not much that says scream more than fresh strawberries. Those bright red beauties scare my winter blues away with promises of softly sweet drinks and cocktails. Yum!

If I have the chance to pick strawberries straight from the field, I’m going to jump on it! There’s something extra sweet about searching out these ruby-red gems from amongst the leaves. I’ve tried growing them at home in my garden, but it’s hard to compete with the wildlife who love strawberries just as much as I do! (Looking at you, deer friends.)

The Strawberry Mocktail packs strawberry flavor into one delightful drink! It’s light, refreshing and so delicious. Even better, it’s easy to make! This is going to be on my short list for every occasion, all spring long.

These bubbly beverages would be perfect as a non-alcoholic option at a party, or to sip for a quiet night in. You could even take it on the go — the possibilities are endless!

A mocktail is a non-alcoholic cocktail. Mocktails have become more and more popular, and are now on many menus at restaurants and bars.

They are a great option for those who aren’t of age to drink alcohol, or those who prefer to avoid it. During challenges like Dry January and Sober October, individuals opt out of alcohol for the month as a personal challenge and drinks like this are a great alternative to sip on.

Mocktails are more than just soda. With elevated ingredients and gorgeous garnishes, mocktails are fun to drink! Whenever I’m hosting, I always like to have one on the menu for guests.

This Strawberry Mocktail doesn’t take much to shake up!

You’ll need a saucepan, spoon and mesh strainer to make strawberry syrup. For the drink, grab your favorite cocktail shaker!

I served my mocktails in coupe glasses for an elegant presentation. This is what I would recommend if you’re serving for a special occasion. However, for everyday enjoyment you can use whatever glass you’d like!

Ingredients

You can shop for these strawberry mocktail ingredients at your local grocery store and/or liquor store. Here’s what you’ll need to make the recipe: 

  • Strawberry syrup: I use homemade but you can also use store-bought or even make a syrup from strawberry jam or preserves.
  • Lemon juice: Fresh citrus is the best option for any homemade drink. If possible, don’t skip this step!
  • Club soda: You can also use sparkling lemonade, ginger ale or seltzer to make this. Anything bubbly for a champagne vibe without the booze.

Garnishes

Just because this is a non-alcoholic drink, doesn’t mean it doesn’t get a garnish! This pretty pink drink doesn’t need much to dress it up! I used a slice of strawberry on the rim of my coupe glass to compliment the color and flavor.

You could add a strawberry sugar rim for a little extra sweetness or a lemon twist to add a touch more citrus. An edible flower or fresh herb sprig would be a fun springtime touch, too — I love making flower ice cubes for a surprising touch. When it comes to garnishes, the options are endless!

Best strawberries for strawberry syrup

My motto is always fresh is best. Using fresh ingredients gives you a more authentic, robust flavor.

That being said, strawberries aren’t always in season (tragic, I know). If you don’t have fresh strawberries on-hand, frozen strawberries will work too. Simply thaw them, then treat them as you would the fresh stuff.

Dehydrated strawberries are another option. Whatever you use, try to find something with just strawberries on the ingredient list.

Variations

Switch up the flavor: Once you’ve enjoyed a Strawberry Mocktail, try making it in different flavors by swapping out the strawberry simple syrup. Here are some flavors that would be great:

Swap out the bubbles: You could give some bubbles by using sparkling water or even a soda like Sprite instead of club soda, depending on what you have on-hand.

Ok, so just how do you make a Strawberry Mocktail? It’s easy!

First, grab your cocktail shaker and fill it with ice. Pour in your strawberry syrup and lemon juice.

Give it a good shake to combine your ingredients, then pour into a coupe glass (or whichever glass you prefer). Top with club soda and garnish with a strawberry slice. Cheers!

How to use strawberry syrup

Strawberry syrup is so tasty, you may just want to use it in everything! Pour it right on top of pancakes or drizzle it over desserts — it would be a tasty addition to champagne cupcakes!

In terms of drinks, the sky is the limit! The iconic pink drink uses strawberry syrup to achieve its pink color and the strawberry martini is the perfect lightly sweet sipper thanks to this red syrup.

If you find yourself with an excess of strawberry syrup (which has never happened to me — it’s that good), you can freeze your syrup to save for the next time you need it.

Food pairings

When I think of strawberries and spring, I think light, bright flavors! This strawberry mocktail would be effortlessly elegant for entertaining with caprese skewers or sweet potato toast bites.

If you need to fill up on more than appetizers, try some turkey caprese sandwiches or even a homemade pizza! Really, this delicious drink goes with anything.

Strawberry Simple Syrup

Strawberry Mocktail

  • 1-2 ounces strawberry syrup
  • ½ ounce lemon juice
  • 4-6 ounces club soda or sparkling lemonade
  • 1 slice strawberry for garnish

Strawberry Syrup

  • Wash the fruit. Hull strawberries to remove stems, then quarter them. (See Notes section below for tips on using frozen strawberries.)
  • In a medium saucepan, bring water and strawberries to a boil. Lower the heat and bring to a simmer for 15 minutes. Remove from heat.
  • Pour through a fine mesh strainer to strain the hot liquid into a bowl or jar. Discard solids.
  • While still warm, add sugar and stir into the strawberry mixture until sugar dissolves.
  • Let cool to room temperature. Store in an airtight container for up to two weeks.

Strawberry Mocktail

  • In a cocktail shaker filled with ice, add strawberry syrup and lemon juice. Shake well.
  • Strain into a coupe glass. Top with club soda. Garnish with a strawberry slice.

notes

You can use frozen berries for the strawberry syrup, ideally already sliced ones. Use them like you would fresh ones. If they are frozen whole berries, let them thaw first, then slice them and use them in this recipe. Dehydrated strawberries can be used to make the syrup too.
