Pimento cheese is one of the quintessential Southern recipes.

It’s amazing spread over crackers and chips. It’s stunning scooped onto a burger. And it is divine stirred into macaroni and cheese.

I also recommend grilled pimento cheese sandwiches. Sometimes we even call pimento cheese ‘the caviar of the South.’

If you’re not from the South, this cheesy spread is made from shredded cheddar cheese, a spot of mayonnaise and diced pimentos, which are sweet and tangy peppers.

Once you’ve got that recipe down, you can add stuff.

I’d start by having fun with cheeses and adding applewood smoked bacon to the mix.

I made this Spicy Bacon Pimento Cheese to pair with a special gift from Pig of the Month BBQ. They sent me a huge box of deliciousness that included the thickest cut of Applewood Smoked Bacon and a whole host of other goodies:

I cooked up everything Pig of the Month BBQ sent me and invited a few friends and neighbors over for a barbecue.

I loved this box because all the meats were really easy to prepare. I’m not an expert griller at all, but the instructions were easy and I didn’t even have to think about marinades or rubs!

You can prepare most of the items in the oven or on the grill. Next time I have a barbecue, I’d love to get another of these boxes because it made the food prep super easy.

To go with the barbecue and the Spicy Bacon Pimento Cheese, I also made a simple slaw, a green salad and my Melon, Mint + Mozzarella Salad for sides and my Banana Pudding Ice Cream Cake for dessert.

This would be a great menu for a July 4 barbecue! (Or any summer barbecue menu, really.)
