Pumpkin Spice Oatmeal // Feast + West

I have a question for you: What do you have for breakfast on the day of the year when you’ll eat the most you have eaten in, well, a year? Surely not a giant meal of pancakes and eggs and bacon and french toast and and and… right?

If you do, I am seriously jealous of your ability to eat all the things ever on Thanksgiving. It’s my favorite holiday, so I prefer to eat light for breakfast so I can enjoy the big meal later. Tomorrow morning, I’m planning on making this Pumpkin Spice Oatmeal I made for My Cooking Spot a few weeks ago.

I’ve been on a major oatmeal kick lately, and I have been enjoying experimenting with different flavor combinations. This one is spiced with cinnamon and brown sugar and topped with pumpkin seeds — so delicious and so easy. By the way, Feast + West will be taking tomorrow and Friday off. Pumpkin Spice Oatmeal // Feast + West

Start your day with cozy comfort! This pumpkin spice oatmeal is packed with warm fall flavors, hearty oats, and a touch of sweetness for the perfect seasonal breakfast.

ingredients

  • ½ cup quick-cooking oats
  • 1 cup water
  • pinch of salt
  • 1-2 tablespoons brown sugar
  • pinch cinnamon to taste
  • pinch pumpkin pie spice to taste
  • 1-2 teaspoons pumpkin purée optional
  • 1 tablespoon unsalted pumpkin seeds optional

instructions

  • Prepare oatmeal with water and salt according to package instructions. (Mine gets microwaved for 1 minute, 30 seconds.)
  • Top with brown sugar, cinnamon, pumpkin pie spice and pumpkin purée (if using). Let cool for 1-2 minutes. Stir together to combine. Top with pumpkin seeds. Serve hot.

    Oatmeal is one of my FAVORITE breakfasts because it’s hearty enough to sustain me for a long time while being healthy and not making me feel bogged down. I always eat it before a long run. And it’s my go-to breakfast in the wintertime. While it’s not going to be chilly where I am this Thanksgiving, I’m totally pinning your recipe for later because YUM.
