Thank goodness for coffee. Its sweet nectar ensures I’m a pleasant person before noon each day. I’m not picky, I’ll sip a cold brew, an Irish coffee mocktail or a lavender latte for my morning boost. 

But sometimes, I need something a little sweeter to get me through the day. And what could be sweeter than a cookie?!

Tools & equipment

Before you bake, be sure that you have everything you need to make these caffeine-filled delights. A cookie sheet * (or two) is a must. Don’t forget the parchment paper * to prevent sticking! 

A large mixing bowl * or two and measuring cups will get you the right consistency while a spatula * will help the ingredients to incorporate. A wire cooling rack is a nice addition to help your cookies cool quickly — and let you get to tasting them sooner!

You’ll want a mixer — either a stand mixer or hand works — to ensure your batter is well combined along with a rubber spatula *.

You’ll also want to use an air-tight container for storage to help your cookies last. Although they’re so good, they may not even make it there!

Here’s what you need for this tasty twist on a classic — you probably already have most of this on hand:

Substitutions & variations

If you prefer a lighter cookie, you can use different chocolate chips in place of the dark chocolate. I prefer semi-sweet chocolate in my cookies, but follow where your heart calls you. White chocolate or chocolate chunks would be good too!

Cacao nibs make your cookies a little darker and crunchier, but are totally optional. 

Give your batter a little extra boost of coffee flavor by upping the amount of espresso powder (a couple of tablespoons should do it). You can also use instant coffee instead if that’s what you have on hand.

Instructions

Let’s get mixing these coffee cookies!

Preheat your oven to 375°F (190°C). Get your baking sheets lined with parchment paper * and set aside for now. 

Combine your flour, baking soda and salt in a mixing bowl * and set these dry ingredients to the side. 

Use a mixer to cream together butter, granulated sugar and brown sugar in a large bowl until the mixture is light and fluffy. Add your vanilla extract * and sprinkle in your espresso powder, followed by your eggs, mixing well after each addition. 

Gradually add your flour mixture and beat until a cookie dough forms. Fold in your chocolate chips and cacao nibs using a spatula.

Drop rounded tablespoons (feel free to use a cookie scoop * if you have one) of the dough onto your parchment-lined baking sheets, leaving about 2 inches in between each cookie.

Then pop into the oven and bake 9 to 11 minutes, or until the cookies are golden brown. Transfer onto a wire rack to cool and enjoy, or store when fully cooled in a sealed container.

Tips & tricks

Set your butter out ahead of time to warm. When it’s at room temperature it’s much easier to get the fluffy consistency when combined with the sugars.

Keep an eye on your cookies! Baking time can vary oven to oven, so you’ll want to watch for that gorgeous golden brown color to know when they’re done and have the right chewiness, rather than over-baking them for a more crunchy cookie.

If you’re not using parchment paper, be sure to grease your baking sheet * well to prevent sticking. Butter or non-stick cooking spray are good alternatives.

Food & drink pairings

You can’t go wrong when you pair cookies and a cold glass of milk! Add some homemade chocolate syrup and make chocolate milk as a sweet alternative. These would also go well with a french press coffee, which would bring out that delicious coffee flavor.

A nightcap would be a great compliment to these cookies! Try a classic white Russian or a milk punch for a boozy sipper or a hot chocolate for something more cozy.

Why are my cookies so crunchy?

If you have crunchy or dry cookies, it’s likely your baking time. Over-baking your cookies can give them a crunchier texture. Keep an eye on them as they bake and pull them out as soon as they are golden brown for chewy cookies.

Can I use instant coffee for baking?

Yes! Instant coffee is an easy substitute for espresso powder. It will change the flavor of the cookie depending on what type of coffee you use. I don’t recommend using coffee grounds, however, as they will give your cookies a grainy texture and not concentrated coffee flavor.

Feel free to substitute milk chocolate chips (or your favorite chocolate chips) for a lighter cookie. You can up the coffee flavor by using more instant espresso powder — a couple tablespoons more should do it!
Store your cookies in an airtight container at room temperature. You can also roll the balls into dough and put them in the freezer, then bake from frozen (you’ll need to add a few minutes to the baking time).
