Boozy Salted Caramel Macchiato Milkshakes

Sometimes when I am feeling stuck and uncreative and I don’t know what recipe to make, I start with something I love and add to it. And add to it. I was feeling that way this week — what could possibly be the perfect end to Popcorn Week?

I first thought about caramel corn, which somehow led me to the caramel macchiato. That was my go-to coffee drink back in college. I rarely drink them anymore, but once in a blue moon I will treat myself.

Then, I added a bit of sea salt, because anything salted caramel is also my favorite. And then I added coffee ice cream in lieu of the macchiato’s espresso and milk. And then I added booze. Because of course I did. And because who doesn’t love boozy milkshakes?

And that’s how I came up with the very delicious Boozy Salted Caramel Macchiato Milkshake. Now do you see what I mean? That’s my secret trick to developing recipes. Or it’s just the weird way my mind works. You’re welcome for that little piece of knowledge.

The last thing I added was a popcorn garnish. I speared popped popcorn kernels with wooden skewers and added them to the glasses. I might have been waiting for an excuse to use popcorn as a garnish on a cocktail. Really, I have. But I finally found it. Popcorn Week is as good a reason as any — if not the best reason. (Bonus points if you garnish this drink with my Sea Salt Caramel Popcorn.)

Boozy Salted Caramel Macchiato Milkshakes

Yield: 4 8-ounce milkshakes

A boozy milkshake that dreams are made of

ingredients

  • 2 cups coffee ice cream
  • ½ cup heavy cream more or less as needed
  • ¼ cup caramel sauce plus more for drizzling
  • ¼ cup bourbon
  • pinch sea salt
  • popcorn for garnish

instructions

  • In a blender, combine ice cream, heavy cream, caramel, bourbon and salt. Blend until thick and well-combined. Add more cream, a splash at a time, if too thick. Add more ice cream if too thin.
  • Drizzle caramel sauce in an abstract pattern inside of glasses. Fill glass with the milkshake. Drizzle with additional caramel on top. Garnish with a wooden skewer with popcorn.
