Light, effervescent and endlessly riffable, the spritz is one of the most versatile drink formats around. It traditionally starts with wine or a bitter liqueur topped with something sparkling, but the category has expanded well beyond Aperol spritzes to include wine spritzes, mocktail versions and creative seasonal variations.

  • A classic Italian spritz starts with a bitter spirit like Campari, Lillet or Aperol, but they can also be sweet such as with the limoncello spritz. 
  • The ratio of wine to sparkling water is flexible — adjust it to your taste.
  • Garnish with whatever's in season: citrus, herbs, fresh berries.
