Make these Toasted Sweet Potato Bites topped with goat cheese, dried cranberries, walnuts and fresh sage! They are a delicious, customizeable party appetizer everyone will devour.
Preheat oven to 350°F (177°C) . Line a baking sheet with foil or a silicone baking mat and set aside.
Peel sweet potatoes, if desired, and cut into ¼-inch thick rounds. Place in a single layer on the baking sheet.

Bake for 10 minutes, then flip and bake for another 10 minutes. Sweet potatoes should be slightly dried and crispy — if not, flip and bake for another 10 minutes. Remove from oven.
Top with dollops of goat cheese and sprinkle with walnuts, cranberries and sage ribbons. Serve warm.

Size matters, shape doesn't: You can cut the sweet potatoes lengthwise (long potato shape pieces) or crosswise (smaller circles), depending on how big you want them. As long as they're thin, the shape doesn't matter!Topping ideas:
Bottom layer: The bottom layer should be cheesy or gooey — something that the other toppings will adhere to. You could swap in brie cheese, blue cheese or cream cheese, or start with a spread like hummus, mashed avocado or peanut butter.
Sweet toppings: Fresh or dried fruit are great! Fresh berries or things like raisins or chopped dried apricots would be good too. You could even drizzle on honey or maple syrup. Some people like to melt a marshmallow on top!
Savory toppings: Nuts are an easy add, but you can even add crispy bacon or whatever sounds good. A drizzle of aioli or a sprinkle of everything bagel seasoning would add a lot of flavor. Swap out the fresh sage for fresh basil, rosemary, parsley or even mint.
