This layered, berry-flavored mojito is a patriotic cocktail fit for summer holidays or anytime.

1ouncelime juicefresh-squeezed, divided
6-8leavesfresh mintdivided, plus more for garnish

Instructions
Red layer: In a cocktail shaker or mixing glass, add ½ ounce lime juice, ½ ounce simple syrup, the mint leaves, strawberries and raspberries. For a stronger citrus taste, add one of the lime rinds as well.
Using a muddle stick, mash the mint, berries and sugar to release the berries' juices and the mint oils.
Add 1 ounce rum and stir together. Pour into a highball glass. Add some more red berries and mint leaves, and top with a generous amount of ice.
Blue layer: In a cocktail shaker or mixing glass, add ½ ounce lime juice, ½ ounce simple syrup, the mint leaves, blueberries and blackberries. For a stronger citrus taste, add one of the lime rinds as well.
Using a muddle stick, mash the mint, berries and sugar to release the berries' juices and the mint oils.
Add 1 ounce rum and stir together. Pour over the red layer and ice layer in the highball glass. Add some more blueberries, blackberries and mint leaves. Top with a splash of club soda.
Garnish the glasses with fresh mint sprigs, slices of lime or a skewer of berries. Add additional club soda to glasses if you’d prefer a lighter drink.
Notes
You can substitute 1 tablespoon of granulated sugar for the simple syrup if you prefer.Want a simpler cocktail? Use mint simple syrup for a simplified cocktail. Then muddle all the berries together instead of making layers. You can also make the drink right in the glass, but there will be a good bit of berry pulp and seeds that may not be a desirable texture for some. Non-alcoholic version: Use a zero-proof spirit like Ritual rum alternative or Seedlip Garden 108 instead of the rum. You may also simply omit the rum, but you should plan to add more club soda.
