In a medium saucepan, combine water and peaches and bring to a simmer for 15 minutes. Remove from heat.
Strain out peaches with a fine-mesh strainer.
Stir in sugar until dissolved. Let cool completely before using or storing. Store in an airtight container in the fridge and use within 2 weeks.
Peach Lemonade
Strain freshly-squeezed lemon juice into a large bowl or pitcher.
Stir in water and 1 cup of peach simple syrup. Add more to taste, if desired.
Refrigerate for at least 1 hour before serving. Enjoy within 1 week.
To serve, pour into a glass filled with ice. Garnish each glass (or the pitcher) with fresh peach and lemon slices.
Notes
Lemon juice: Use the juice from fresh lemons. Bottled concentrate can work, but it is stronger tasting and more sour than fresh juice, and it can overpower the softness of the peaches. Juicing the lemons is seriously worth the effort.Peaches: You can use fresh or frozen peaches. In the summer, try to use fresh for a stronger peach flavor!
