In a medium saucepan over medium heat, combine sugar and water. Stir until sugar has dissolved. Do not let boil.
Remove from heat and let cool completely.Store in a mason jar for up to one month.
Iced Brown Sugar Oat Milk Shaken Espresso
Add espresso and brown sugar syrup to a cocktail shaker or mason jar filled with ice. Cover and shake well to incorporate.
Add ice to a glass. Strain the espresso mixture over the top.
Top with oat milk. Sprinkle cinnamon on top.

Sugar-free shaken espresso: Use sugar-free simple syrup with stevia or an unrefined sugar syrup like maple syrup or honey simple syrup in this recipe.Oat-free shaken espresso: You can use soy milk, almond milk or coconut milk instead. Whole milk or skim milk will also work, but half-and-half and heavy cream will be too thick. When shaken, they will firm up too much.
