Preheat oven to 350°F. Line a baking sheet with foil. Arrange bread slices on baking sheet lined with parchment paper or a silpat. Drizzle with olive oil. Bake for 10 minutes or until golden brown and slightly crisp, but still soft in the middle. Remove from oven and let sit until cool enough to handle.
Spread 1/2-1 tablespoon of goat cheese onto each baguette slice. Top with fig wedges and bacon crumbles. Drizzle honey over top. Sprinkle lightly with sea salt. Top each with a thyme sprig.
