In a medium saucepan over medium heat, combine sugar and water. Stir until sugar has dissolved. Do not let boil.

Remove from heat and add the mint sprigs. Let rest for 15 minutes, stirring occasionally. Leave in longer for a stronger flavor. Discard the mint leaves.

Store in a mason jar for up to one week.
Virgin Mint Julep
Add mint syrup to a julep cup or rocks glass. Add 1½ ounces whiskey alternative. Stir together.
¾ ounce mint syrup, 1 ½ ounces zero-proof whiskey alternative
Top with crushed ice. Pack it into the cup.

Add the remaining 1 ounce whiskey alternative on top.

Top with more crushed ice and garnish with a mint sprig.

Notes
The mint syrup is time-saving if you are making more than one drink. If you prefer to muddle your mint julep, you can use:
~8 mint leaves + 1 ounce plain simple syrup
~8 mint leaves + 4 teaspoons granulated sugar (added with the bourbon)
