In a cocktail shaker, muddle watermelon and jalapeño until the juices are released.
Add tequila, lime juice, agave nectar and ice to the shaker. Shake well.
Strain into a rocks glass with a large ice cube.
Garnish with a piece of watermelon.
Notes
Make it spicier: You can add more jalapeño slices if you want a spicier drink. Add some hot sauce too if you like! Less spicy: Don’t add all of the jalapeño seeds to the shaker for a milder cocktail. More flavors: Muddle some fresh basil leaves when muddling, or add in some cucumber. You can also do a salt rim if you like! To make a large batch: Use jalapeño simple syrup instead of agave nectar or use jalapeño tequila for the tequila. Instead of muddling watermelon, use store-bought watermelon juice or purée your own. Use about 2 ounces per cocktail.
