In the bowl of a stand mixer, or using a handheld electric mixer, whip the heavy cream, sugar, vanilla extract, lemon juice, and lemon zest together on high speed. Whip until the mixture forms soft peaks.
To assemble the parfaits, layer lemon whipped cream, then raspberries and finally Nilla wafers, distributing evenly between 4 bowls or glasses.

For the parfaits you see here, I got two full sets of layers in, plus an extra layer of whipped cream and raspberries.
