Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
On a lightly floured surface, roll out one sheet of puff pastry to ¼-inch thickness.
In a small bowl, whisk together egg and water to create an egg wash.
Brush the egg wash over the puff pastry dough. Sprinkle with Parmesan cheese and Italian seasoning.
Slice the pastry into about 18 ½-inch strips. Twist one piece a few times, then place on the prepared baking sheet. Repeat with remaining strips, spacing them 1 to 2 inches apart.
Bake for 12 to 15 minutes. Repeat with the other sheet of puff pastry.
Notes
Keep an eye on these as they bake! If they stay in the oven too long they'll end up crispier.
