passion fruit
about ¼ cup of pulp

Instructions
Scoop out the pulp. Cook the passion fruit and ½ cup water over medium heat.
Bring to a boil, then reduce to low and simmer for 5 minutes. Remove from heat.
Strain the pulp through a fine-mesh strainer, using a spatula to press against the sides to push out more juice.
Return the strained juice to the pan over low heat. Stir in the sugar.
Notes
Store in a food-safe, airtight container for up to 1 month.
