With the mint leaves in the palm of your hand, clap your hands together 1-2 times to release the mint oils and fragrance.
Place mint leaves in the bottom of a julep cup or old-fashioned glass. Add a splash of the honey whiskey. Use a muddler or the blunt end of a wooden spoon to press into the mint leaves and further release the oils.
Top with the remaining honey whiskey, then top with the crushed ice. Garnish with a mint sprig. Serve immediately.
Notes
If you don't have honey whiskey, you may use 1/2 ounce of honey simple syrup along with your favorite unflavored whiskey.
