In a large bowl or pitcher, add the cucumber, half the lime slices and fresh mint. Use a muddler, wooden spoon or fork to gently mash the produce together.
Top with water. Refrigerate for at least 1 hour, or overnight.
Strain out the solids and transfer the liquid to a pitcher.
Serve in glasses over ice with slices of cucumber and lime. Garnish with fresh mint.
Notes
For stronger flavor, allow your water to infuse for a longer period of time.Water can be stored for 2-3 days in the refrigerator, but will taste freshest during the first couple of days.
