Notes
Syrup tip: Before adding a fresh rosemary sprig to the syrup, hold it in one palm and clap your other hand on top a few times. Bartenders call this “spanking” the herb. It releases essential oils and makes a more aromatic syrup.Syrup storage: Keep the rosemary simple syrup in a mason jar for up to two weeks.Cranberry juice: 100% cranberry juice tastes a little purer. Cranberry juice cocktail gives a more brilliant color when presentation matters.Sugared rosemary: Choose a sturdy sprig and dip it in simple syrup. Let the excess drip off, then let it sit for 30 minutes or more until sticky. Wipe off any excess liquid and roll the sprig in sugar.
