2cupsfresh basil leavespacked, washed and patted dry
1cupHimalayan pink salt or coarse sea salt
Instructions
Preheat the oven to 250°F (121°C).
Pull the leaves from the basil stems. Measure 2 packed cups.

Add the basil leaves and salt to a food processor. Pulse until the leaves are finely chopped and evenly combined with the salt.

Transfer the mixture to a parchment-lined baking sheet and spread into a thin, even layer.
Bake at 250°F (121°C) for 40 to 45 minutes, until the salt feels completely dry, firm and crumbly to the touch. Keep a close eye on it — you want the basil to dry out without burning or losing its green color. It should not turn fully brown.
Remove from the oven and let the mixture cool completely on the baking sheet.
Transfer the cooled mixture back to the food processor and pulse several times to break up any clumps and even out the texture.
Store in a clean, airtight glass jar.
