You'll do some cooking on the stove, then finish the queso off in the oven. Preheat to 350°F (177°C) .
Remove sausage from casings and brown in the skillet with olive oil. Drain grease.
Stir together the chorizo and green chiles and place in an oven-safe dish.
Cover the mixture with shredded cheese. Bake until bubbly.
While still warm, top with pico de gallo or your favorite toppings, and dig in!
