4 prickly pears 1 cup water 1/2 cup sugar 1/4 cup lime juice

Halve prickly pears.

Use caution with the thorns — use gloves or tongs to handle. Scoop out the fruit and seeds.

Simmer ingredients.

Place water and pulp into saucepan and simmer 30 minutes.

Strain out pulp.

Use a fine mesh strainer to remove pulp and seeds. Wipe out saucepan.

Add sugar.

Return liquid to saucepan and add sugar. Stir until dissolved, don't boil.

Chill out.

Let the mixture cool completely. Stir in lime juice.
