Homemade Ginger Ale

Homemade Ginger Ale makes for a refreshing beverage with lots of zing. Flavorful and spicier than store-bought soda, it can be sweetened to your liking.

a strainer a mason jar or bottle with a lid

1 cup diced ginger root  4 cups water 2 teaspoons vanilla extract

½ teaspoon lemon extract (optional) ½ cup simple syrup or honey, to taste club soda or seltzer

Heat things up.

Simmer ginger and water over medium heat until water reduces by half.

Sweeten the deal.

Add your sweetener. If using honey or regular sugar, add while hot.

Strain out ginger.

Remove the ginger root once the mixture has cooled using a fine mesh strainer.

Store for later.

Pour your concentrate into a food-safe container and store in the fridge.

Make a drink.

Add ice to a glass and fill 1/4 full of concentrate. Add simple syrup if desired and top with soda. Enjoy!
