classic raspberry gin cocktail

plymouth gin dry vermouth lemon juice raspberry syrup egg white fresh raspberries
makes: 1 drink
You can muddle 3 or 4 fresh raspberries with ½ ounce simple syrup or 1 tablespoon of sugar.
Add gin, dry vermouth, lemon juice, raspberry syrup and egg white to a cocktail shaker.
Shake well for 30 seconds without ice.
Then add some ice to the cocktail shaker.
shake vigorously again to aggravate the egg white to get the best layer of foam on top.
Use a Hawthorne strainer to hold back the ice and strain out the liquid into a coupe.
Garnish with three raspberries on a cocktail pick.
Make it vegan with aquafaba instead of egg whites.
Use another kind of berry, such as cherry, blueberry or strawberry.
Use a zero-proof alternative with herbal notes to replace the gin.
