1/2 cup water, divided 1/2 cup granulated sugar 1/2 teaspoon vanilla extract pinch of salt, for salted caramel syrup
makes: 3/4 cup
Combine 1/4 cup water and 1/2 cup sugar in a medium saucepan over medium heat.
Stir the sugar and water mixture until dissolved, about 5 minutes or so.
Cover and boil, about 3 minutes.
Remove the lid and stir consistently until the mixture is a light amber color.
Remove the mixture from heat immediately. Stir in remaining water and vanilla.
Add a pinch of salt if desired for a salted caramel syrup.
Store in an airtight container in the fridge for up to 1 month.
If it ends up cooking a bit too long, try it as burnt sugar syrup.
