My best advice is to making good guacamole is to buy your avocados a few days in advance and wait until they get squishy enough. One of the worst mistakes you can make with this classic guacamole recipe is not using ripe avocados. Trust me, I’ve been there.

The avocados have to be somewhat firm yet squishy, though not rotten, or they won’t mash well. You can also use the paper bag trick — enclosing an avocado with a banana in a paper bag traps ethylene gas, which helps to ripen it faster.

I make guacamole a little bit differently every time, depending on what I have on hand. It’s very easy to tailor to picky guests, so be creative and make any substitutions you need:

Begin by removing the avocado pits and remove the avocado fruit from the skin.

To make it easier to mash, you can cut the ripe avocados into 1-inch chunks, but you don’t have to if your avos are ripe enough.

Scoop them into a large bowl and then use a fork or potato masher to mash the green creamy avocados.

Then add in the lime juice, bell peppers, tomato, onion, cilantro, garlic, salt and pepper.

  • 4 avocados ripe
  • 2 tablespoons fresh lime juice approximately one lime
  • 1 red bell pepper diced
  • 1 medium tomato diced
  • ½ white onion finely diced
  • ½ cup fresh cilantro roughly chopped (optional)
